Top bar entrepreneurs take over The Lexington

Tom and Ed Martin, of the ETM Group, are expanding their empire with a partnership deal. The pair are taking over the kitchen at the popular Islington venue and adding food to the menu. Awards received by ETM in the past include the Sunday Lunch Pub of the Year title at the Publican Pub Food Awards in 2006 for the Gun, in Docklands, and the business now operates eight pubs.
At the Lexington, the menu will reflect the US theme established by owner Stacey Thomas. Dishes will include ribs with a bourbon sauce, crawfish and chips, hot dogs and burgers - with bourbon bread and butter pudding and New York cheesecake among the desserts. The average customer food spend is expected to be £11 a head. The Lexington offers more than 40 bourbons, the largest selection in the UK. Bottled American beers include Anchorsteam, Brooklyn Lager, Sierra Nevada, Goose Island, and Dead Guy Ales.
A spokeswoman for The Lexington on Pentonville Road said the owners had no previous experience of providing food, but wanted to broaden the business' appeal to both existing customers and new ones, so approached ETM with the proposition.
"Before we started doing food it was never open at lunchtime, but there are lots of businesses along Pentonville Road, so it makes sense to provide workers with somewhere to go and there will be a higher number of students in the area come September, " she said.
"The Lexington's owners didn't have the contacts on the kitchen side of things, so they decided to call in ETM's expertise."
